How about some vegan pineapple fried rice my friends?🍍😍 Okay, but first can I start off with how I want all my food to look like this? I mean, how fun is it to eat from a pineapple bowl? It's different and spices things up with this vegan pineapple fried rice! This is a yummy vegan pineapple fried rice recipe that hubby and I came up with and we were obsessed! Ingredients

  • 1 full pineapple
  • 1 red bell pepper
  • ¼ green bell pepper
  • 5 large garlic cloves
  • ½ red onion
  • ½ fresh jalapeno pepper
  • 6 mushrooms
  • 1½ fresh lime
  • ¼ fresh pineapple juice (from the pineapple)
  • Fresh cilantro
  • 1 green onion
  • ½ cup cashews or peanuts
  • 5 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • Brown rice

Cooking Instructions

  • Take the full pineapple and cut it half (please ensure to leave the 'crown' of the pineapple on).
  • Cut a circle inside the pineapple, slice the body, and slowly take out the fruit to create a pineapple bowl.
  • Finely chop garlic and red onion and saute in a deep dish pan with heated olive oil.
  • Chop the bell peppers into small cubes and add them to the pan, then add the chopped mushrooms.
  • Add small chunks of pineapple, salt, pepper, and fresh jalapeno chunks.
  • Add soy sauce, hoisin sauce, and freshly squeezed lime juice.
  • Add the fresh pineapple juice and stir thoroughly.
  • Optional: add sriracha sauce for an extra kick!
  • Once veggies are cooked, add 3 cups of brown rice, mixing well.
  • Serve the fried rice in the pineapple bowl, topped with peanuts or cashews, fresh cilantro, and green onion.
