Vegan waffles may be one of the most fun things to eat for breakfast (or brunch, lunch, dinner 😉). Now the following is a quick tip for your vegan waffle dreams. For this specific recipe, we used a store-bought vegan & GF waffle mix, which at times makes it faster and easier in the morning. However, most mixes require eggs, and so in this post you will be able to see what you can substitute for your waffle mix.
Ingredients
- Vegan waffle mix (GF or regular)
- 2 bananas or Chia seeds (as egg replacer)
- Natural Maple Syrup
- Soy milk (or any plant-based milk)
- Himalayan salt
- Almond butter
- Vegan butter
- Optional: natural vanilla extract
Cooking instructions
- Pre-heat your waffle maker.
- Melt 2 tbsp of vegan butter (either on a stove or microwave).
- Brush the vegan butter on the waffle maker to make sure the batter doesn't stick.
- In a bowl, follow the box instructions for the waffle mix. Use plant-based milk for the liquid portion.
- Mix the batter thoroughly, and add melted vegan butter instead of oil to make it more 'buttery' and 'creamy'.
- Add 1-2 tbsp of maple syrup to the batter, ¼ tsp natural vanilla extract, and a pinch of Himalayan salt.
- If you are using Chia seeds, make Chia 'eggs' first by adding 1 tbsp of Chia seeds with 2 tbsp of water in a cup (this will equal to one egg), allowing it to sit for a minute, stirring it well.
- Add the Chia egg to the batter and mix thoroughly.
- If you are using banana instead of chia seeds, make sure to mash it well until it has a batter-like consistency and add it to the mix.
- Once the batter is ready, pour it into the waffle maker and let it cook according to instructions.
- Once the waffles are done, add fresh banana slices, almond butter (or peanut butter), and drizzle with maple syrup.
