This oatmeal recipe is bursting with flavor and packed with protein and great nutrients! This one is my hubby's favorite and I hope you enjoy it as much as he does! P.S. Ingredients:
- Rolled oats
- Chia seeds
- Mixed nuts (or nuts of choice)
- Shredded coconut
- 1 banana (Optional: add more fruit of choice)
- Peanut butter (or almond butter)
- Optional: add plant based milk if desired
Cooking Instructions:
- In a medium sized pot, boil water and add ¼ tsp of salt.
- Add rolled oats to the boiling water and stir it in.
- Add 2 tbsp of Chia seeds and thoroughly stir it in together.
- Let it simmer for a minute and then add your choice of nuts (about 1/3 cup of nuts).
- Add 2 heaping tbsp of shredded coconut and mix it all in together.
- Thinly slice ½ banana and add to the pot, stir and let it simmer for about 5-7 minutes.
- Once the oats absorb the water and the oatmeal is thicker in consistency - it's ready to be served and 'dressed' up.
- In a bowl, add your oatmeal and slice the other ½ of the banana on top.
- Top with chia seeds, mixed nuts and seeds of choice, any other fruit you may want to add and your nut butter of choice. Enjoy!
