'Hash' You Heard? 😉
I know this is very basic, but I couldn’t wait for every weekend to come so that I can enjoy a nice brunch with my family and friends. There is just something comforting with a weekend vibe about it. The only problem sometimes is that a lot of cool & hip restaurants don’t offer much for vegans so I would often resort to a small side dish of something and a whole lot of mimosas (just to keep the balance lol). Subsequently, hubby's vegan breakfast hash was born!
Once hubby and I started making brunch a thing in our house, and I can honestly say that I look forward to this all the time (and not just on the weekend). This vegan breakfast hash dish was made by my hubby and thought I’d share it with you, as it was literally the most delicious breakfast hash potatoes that I ever had! Ingredients for this Vegan Breakfast Hash from heaven:
- Potato wedges of choice
- 5 garlic cloves
- ¼ red onion
- ¼ jalapeno
- 5 mushrooms
- Fresh cilantro
- Salt
- Pepper
- Olive oil
How He Does it 🔥😍
- In a pan on medium heat, add 5 garlic cloves and saute for a minute before adding the red onion.
- Once you add the red onion, mix it in with the garlic and add salt and pepper to allow the flavor to come out more.
- When the onion is lightly browned, add the potato wedges in and let them cook for a while (until they start softening).
- Add the chopped mushrooms and jalapeno, mix it all in together and let it cook.
- Once the potatoes completely soften, begin to mash them so that it turns into a hash, add more salt and pepper to taste and top with fresh cilantro.
- Let it cook for a bit longer and when serving you can add avocado, hummus or sprinkle with vegan cheese and salsa.
