Vegan Nachos

Ready for thee most delicious vegan nachos?

Are you ready to try the most delicious vegan nachos?! This recipe is 'nacho' average meal, that's for sure! I think it's pretty safe to say that everyone loves nachos - I mean, what's not to love? They are fun, delicious, cheesy and packed with veggies - can I get a big YUM? When I became vegan, it was hard to find nachos that were 🤯😍 and were still vegan. Eventually, I stopped ordering them in restaurants but still always craved them, you know?

This led me to experiment with a few different recipes until I came up with the ultimate vegan nacho recipe! It is super easy to make and the best part about it is that you can almost change up the toppings based on what you're craving (or what you have at home at the time). The recipe below is simply one version that you can try out, but please feel free to be creative and add your own twist! 😉 P.S - check out the vegan tacos and the mini vegan jalapeno popper quesadillas to keep the fiesta going!

Ingredients:

  • Tortilla chips of choice
  • Vegan cheese
  • Roasted red peppers
  • 5 mushrooms
  • ¼ white (or red) onion
  • Pickled jalapenos (from a can)
  • Salsa of choice
  • Olive oil
  • Salt
  • Pepper

Optional:

  • Serve with guacamole (please see our guacamole recipe)
  • Serve with refried black beans (made from scratch or from a can)

Cooking Instructions

  • Chop the mushrooms and onion and on a medium heat pour 2 tbsp of olive oil and saute onions.
  • Once the onion is lightly bronzed, add the mushrooms and roasted red peppers in a pan and let it cook, stirring it frequently. Add salt and pepper to taste to the veggies and wait until they are fully roasted. Once the veggies are ready, set them aside.
  • Cover an oven tray with aluminum foil and spread the tortilla chips evenly on the tray.
  • Add a small amount of salsa on the chips and sprinkle with cheese.
  • Add the roasted veggies evenly on the tortilla chips, ensuring it is spread out well.
  • Top with jalapeno peppers (evenly across the tray and based on your preference of how spicy you would like your nachos to be).
  • Sprinkle the rest of the vegan cheese evenly on top.
  • Place the tray in the oven at 375°F (190°C) for 15-20 min (or until the cheese is melted).
  • Take it out from the oven, let it cool and serve with a side of guacamole, refried black beans and salsa!
