How The Stork Dropped Our New Baby; the Vegan Omelette

We recently discovered the El Dorado of Vegan Omelettes.. seriously, we did. This baby is the most impressive vegan omelet that we've ever had; and if you've read through this site, you'll see that we've had a lot of vegan food. It all spawned from our struggle to find the necessary ingredients for a vegan omelette here in Cozumel, Mexico. Due to the cultural integrity that is intertwined with authentic Mexican food, veganism has been slower to spread in Mexico as it has within most western countries. After doing our research, Yana and I found some Chickpea flower at a local grocery store. Then, one thing led to another, and 9 minutes later, our perfect little Chickpea Vegan Omelete was born 🙌👱‍♂️🥟👱‍♀️.

What You'll Need

  • 1 cup of chickpea flour
  • Mushrooms
  • Red pepper
  • Cilantro
  • Red onion
  • 5 garlic cloves
  • Broccoli
  • Vegan cheese
  • Tomato salsa
  • Salt
  • Pepper
  • Olive oil

How Did We Make Our New Baby? *clears throat, the Vegan Omelette We Mean!! 🤦‍♂️🤦‍♀️

  • Heat up a pan with olive oil, add garlic and red onion first and let saute, then add in the broccoli. Then, add salt and pepper to the mix and taste for the best flavor; set it aside once finished.
  • Take a large mixing bowl and add 1 cup of chickpea flour and 1 cup of water. Add a pinch of salt and pepper, then a ¼ teaspoon of baking soda. Mix it all well together so that there are no lumps; electronic mixer is recommended here.
  • In the meantime, again, chop garlic, ¼ red onion, one red pepper, and mushrooms.
  • Heat up another pan and add 2 tbsp of olive oil.
  • Add garlic, one tbsp of red onion and 2 tbsp of red pepper into pan, and let it saute. Be sure to also add a bit of salt and pepper while it cooks.
  • Using a ladle, pour the chickpea batter into the pan where the veggies are cooking and spread it into a pancake shape with the base of the ladle.
  • Let it cook for 3 minutes and then flip the pancake on the other side.
  • Sprinkle vegan cheese across the entire pancake.
  • After 3 minutes, place the sauteed broccoli on one half of the ‘omelet’ and then using your spatula fold the omelet in half, before you close it sprinkle more vegan cheese on the broccoli and then close it.
  • Lightly fold the omelet in half (gently) so it closes without it cracking. Then place the completed omelet on a normal plate.
  • Once on a plate sprinkle more vegan cheese if you so desire and then put some tomato salsa on top; don't forget to sprinkle fresh red pepper and cilantro on top also!
  • Enjoy this incredible vegan omelette!
